Garlic Scape Pesto

Ingredients:

  • 1/4 lb garlic scapes

  • 1/2 C olive oil

  • 1 C grated Parmesan

  • 3 Tbsp fresh lemon or lime juice

  • Salt to taste

Instructions:

  1. Puree garlic scapes and olive oil in a food processor until smooth

  2. Stir in Parmesan and lemon or lime juice.

  3. Season to taste

They have a mild, fresh garlic flavor that's less intense than the garlic bulbs. Their unique taste makes them a great addition to a variety of dishes including this pesto!

Tips:

Our favorite way to extend the enjoyment of these delicious garlic scapes is by freezing them. We love to puree the scapes and then seal them in a freezer Ziploc bag. This method allows you to easily break off chunks whenever you need them, making it a convenient way to preserve their fresh, garlicky flavor for months. It’s a great way to have garlic scapes on hand long after their season has passed!
