Butternut Squash Soup

Nothing says comfort like a warm bowl of butternut squash soup. This creamy, velvety soup is the perfect balance of sweet and savory, with the natural sweetness of roasted butternut squash enhanced by a hint of aromatic spices. It’s the ultimate fall and winter comfort food, whether you're looking for a hearty meal or a light starter. Paired with a drizzle of cream or a slice of crusty bread, this soup is sure to warm you up and satisfy your cravings. Simple to make and full of flavor, it's a classic that is a favorite in our house!

You can get fresh squash, garlic, and onions throughout the entire month of October when we open to the public.


Ingredients:

  • 1/2 C butter

  • 2 cloves garlic, minced

  • 1/2 sweet yellow onion, diced

  • 1 - 1 1/2 butternut squash, peeled and diced

  • 4 C chicken broth

  • 1 tsp nutmeg

  • 1 tsp ground pepper

  • 1 C cream (or milk)

Instructions:

  1. Melt butter in a large soup pot. Add garlic, onion, and butternut squash. Saute for about 10 minutes until oinoin is translucent. Add broth, nutmeg and pepper.

  2. Bring to a boil, reduce heat and simmer 25 minutes or until squash is soft.

  3. Use an immersion blender to blend the soup until smooth. Add cream/milk. Stir until heated through.

  4. Drizzle on top of each serving with the desired amount of cream.
