Butternut Squash Soup

Nothing says comfort like a warm bowl of butternut squash soup. You can get fresh squash, garlic, and onions throughout the entire month of October when we open to the public.
Ingredients:
1/2 C butter
2 cloves garlic, minced
1/2 sweet yellow onion, diced
1 - 1 1/2 butternut squash, peeled and diced
4 C chicken broth
1 tsp nutmeg
1 tsp ground pepper
1 C cream (or milk)
Instructions:
Melt butter in a large soup pot. Add garlic, onion, and butternut squash. Saute for about 10 minutes until oinoin is translucent. Add broth, nutmeg and pepper.
Bring to a boil, reduce heat and simmer 25 minutes or until squash is soft.
Use an immersion blender to blend the soup until smooth. Add cream/milk. Stir until heated through.
Drizzle on top of each serving with the desired amount of cream.
